I love cooking anything in the crockpot, why I had never thought of making my favorite dish, Cajun Red Beans and Rice in the crockpot is beyond me. I saw a recipe for crockpot Cajun Red Beans and Rice on Youtube and had to try it, after all, I love bacon red beans and rice and I also love my crockpot so it was an obvious match made in Heaven for me. The recipe couldn’t be easier, I just threw all these ingredients into the crockpot, (no pre-cooking necessary). One large onion, one bell pepper, three sausages, four stalks of celery, two minced garlic cloves, green onions (to garnish), 1/2 teaspoon Kosher Salt, 1/4 teaspoon chili powder, one tablespoon Worcestershire Sauce. and one pound of kidney beans.
Then I just added four cups of chicken broth and two cups of water.
Then I just set the crockpot on high and cooked for six hours and I am here to tell you this recipe is absolutely delicious! Growing up on a Bayou South East Texas close to the Louisianna Line, we ate this savory down-home dish at least once a week and I never had tried cooking it in the crockpot, I’m not sure why but after trying this delicious, super easy slow-cooked crockpot variation I’m sold! The only thing I do differently is that I sautee my sausage and veggies in organic butter before I put them in the crockpot with my beans because it seals everything and gives a nice buttery undertone to the wonderful flavors you experience while eating this dish.
