Tamales are a favorite in Texas and they are available almost anywhere you go in our great State, but homemade food is always better so, I’m always on the lookout for things I can make at home. When I saw this recipe for tamales by Cowboy Kent Rollins on Youtube, I knew I had to try it. Whenever I would get sick my Mom would always feed me tamales and they always made me feel better. For many in Texas, tamales are a family affair where you line the family up around the table and turn your kitchen into an assembly line, where everyone plays a part in putting these delicious morsels together. Cowboy Kent guides us step by step how to make these tamales and his recipe looks absolutely delicious and he uses the freshest ingredients, like pork butt simmered in the crockpot with onion and garlic and all those ingredients go back into the tamales, these tamales are really a flavor explosion.
- 2 cups chicken broth
- 3 garlic cloves (minced)
- 1/2 cup white onion (chopped)
- 1 teaspoon cumin
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 1/2 pounds pork butt (chopped into 2 inch pieces)
- Red River Mesquite Seasoning (or other all purpose seasoning)
- 2 bay leaves
- 1 (16-ounce bag of corn husks)
In the video, you will learn the different steps that go into this recipe such as, cutting your pork butt into 2-inch chunks and adding it to the crockpot with chicken broth, garlic, onion. cumin, all-purpose seasoning, black pepper, and salt. You cook for 4 to 5 hours on high, then all your delicious crockpot ingredients will go back in the tamales at the end phase.
Then you will learn to soak your corn husks and fill them with you masa and pork mixture, then wrap for steaming.
